1.   How many types of tea are named?

There are 6 basic types of tea: Black, Red, Green, White, Oolong and Jasmine tea.
Herbal tea is not listed because herbal tea is normally made with fruit, herb or spices which contain no camellia sinensis.

 

2. Where does tea come from? (How the tea is processed?)

All types of tea come from one plant--Camellia sinensis. However, they are named differently because of various oxidation processing and the period when the leaves are picked. For example:

White tea
is picked young from the twigs, which is gently processed to keep the tender flavor. Thus, white tea has lower caffeine compared with other types of tea.
Green tea is the least oxidation processed. Thus Green tea contains the most Vitamins. It tastes best when fresh.
Red and black tea has the most oxidation processing. They retain the flavor for several years. For good quality black and red tea, older (tea) tastes better.
Oolong tea has semi-oxidation processing between Green tea and Black tea, which ranges from 10% to 70% oxidation.

White tea is often used as traditional Chinese medicine such as, to relieve fever, balance the stomach and increase energy. 
Red tea may prevent cardiovascular disease, lower the risk of cancer and balance the system. It is especially good for people who want to warm their stomachs in the morning. 
Green tea contains the most vitamins, whose antioxidant component is 100 times powerful than Vitamin C. Green tea may stop bacteria for the teeth and reduce the risks of skin cancer and heart diseases.

Except white tea, all types of tea have the same caffeine level due to the oxidation processing as well as the location where the tea leaves come from. White tea has the least caffeine level.

6. How to brew whole leaf tea?


Tips on brewing good flavorful tea are to use fresh water, reach the proper temperature, and proper brewing time for whole leaf tea. Note brewing instructions below:

  • Measure one tablespoon of whole leaf tea per 12 oz. cup and put it into a paper filter or steeping ball.
  • Brew tea with fresh water (spring water is ideal).
  • Bring water to boil and submerge tea. In order to keep the oxygen inside the water and preserve the flavor of whole leaf tea, proper temperature is important. Optimal brewing temperature is 176o F (80 o C) for white and green tea after you have set the boiling water aside for several minutes, 212o F (100 o C) for other types of tea when the water has just started to boil.
  • Brew white and green tea for 2-4 minutes. Brew other types of tea for 4-6 minutes. If you prefer light tea, simply reduce the brewing time.
  • Remove tea leaves from the water. Enjoy!

7. How to store tea?

To keep tea leaves fresh avoid heat, humidity and strong flavor food when storing. You can store the tea in a dry closed container such as metal tin or ceramic pot.

8. Origin and history of tea

Tea was originally from China. There was a beautiful story about how the legendary Emperor of China, Shennong discovered the tea 5000 years ago. It was said that Shennong was a knowledgeable expert of Chinese medicine. To develop the medical properties, he tested all kinds of herbs, including poisonous herbs which hurt his system very badly. One day, Shennong was exhausted and cooking water under a wild tea tree, the gentle wind blew a piece of tea leaf to his face. The leaf smelled so fresh, he tasted it and immediately felt energized. He then brewed the tea leaves in the boiling water and noticed the flavor was even more delicious. Tea had been discovered.

Since the 12th century tea was recognized for its special gifts and was introduced to Japan, Europe, America and all over the world. The first tea was brought to America in 1650. For many centuries tea in Asia has played many significant roles such as the medicine, daily beverage and special gifts. Since the 18th century tea has become the most popular beverage which gradually replaced the important position of Beer and Gin at British royalty and the whole European socielty.

The name "Tea" is English. It originally came from Chinese Xiamen dialect “
Te” because the earliest business trading was initiated between China and Holland at Xiamen port of China Fujian province. Tea is called “Te” in Italian, Spanish, Swedish, Denish, Hungarian, Norwegian and Malay. Tea is called “Cha” in Mandarin and “Ch’a” in Cantonese. Tea is called “The” in French, “Tree” in Germany and “Chai” in Russian, India and Pakistan. “Chai tea” is also named for those types of tea with spiced milk.
